The Ultimate Stir Fry

One of my favorite things to eat are vegetables. Salads, roasted carrots, sauteed green beans, raw veggies, cooked veggies…it doesn’t matter, I like it all! It’s probably due to all the allergies I have, but finding new ways to prepare vegetables is an essential to my diet. Especially since being on my “diet” can get a bit boring.

Believe it or not (my husband tends to believe not), veggies can taste really good, especially if they’re cooked the right way. I love stir fry. Everything about it is fantastic. You can add almost any veggie and it’ll still be amazing. I love it so much I wanted to make my own healthier version and so that’s exactly what I did. I only use two things, seasoning and olive oil.

I discovered a type of seasoning that so far has made my meals taste incredible. It’s called GOYA Adobo, All Purpose Seasoning. I love it because it doesn’t have MSG or words that I cannot pronounce. Ha! I’m sure most of you know what the seasoning is but click here to see a picture in case you want to add it to your grocery list.

Ingredients Include: Salt, Granulated Garlic, Tricalcium Phosphate (Prevents Caking), Oregano, Black Pepper, and Turmeric. That’s it!  In my opinion, it completes the dish compared to adding just salt and pepper.

Olive oil is the only other thing I’ve been using. Any brand is fine, but I prefer the extra light tasting olive oil as it doesn’t have too strong of a flavor. Just add a little oil it to the bottom of the pan. Be sure to let the olive oil heat up before throwing in all the veggies. Sprinkle a little bit of Adobo and stir every once and awhile until the veggies are at a desired tenderness.

I get all my veggies from Aldi. Here’s a list of what they carry: Aldi’s Vegetables  In the picture above I added broccoli, sweet peppers, a whole small sweet onion, and a few chopped up baby carrots. Sometimes I’ll add brussel sprouts, snap peas, cauliflower, and one time I even added corn. I have yet to find a sauteed vegetable that I don’t like within my stir fry.

What do I eat it with? Everything. It’s a great replacement for a salad if you run out of lettuce. It’s a way for me to clean out my produce drawer before the veggies start to go bad. I’ll add my stir fry’s to a bowl of brown rice, put it on top of lo mein, add it to my quesadillas, or I’ll even add some to my turkey wraps. Add a little Cholula and you’re good to go!

With this dish you never have to feel guilty for eating the whole pan (yes, sometimes I’ll eat the whole dish in one sitting…oopsies). It’s a cheaper option for a side dish and it’s full of nutrients that the body needs. Not to mention, it’s DELICIOUS!
